Avocado Toast

Avocado toast is just a fancy way of eating guac with bread instead of with chips. Mashing up avocados with only salt and lime juice doesn’t cut it for me. If I’m going to go through that trouble, then why not just make a batch of guacamole with all the flavor.

I have a lot of friends who love my guacamole, and I’ve given them my recipe. But most come back saying it just wasn’t as good as when they had it at my last party. I think that’s because guacamole requires customization every time you make it. Sure, you can mix all of the ingredients in, but then you really need to let it hang out for a while. Let the garlic and onion macerate in the avocado meat, along with the lime juice, cumin and cayenne. Depending on the ripeness of your avocado, the tartness of your lime or the strength of your garlic, you will probably have to add more salt or lime juice almost every time you make it. It’s an organic process—have fun with it!

Avocado Toast

INGREDIENTS

1 Slice of Sourdough Bread
2 tbsp Guacamole (see below)
1 ½ tbsp Balsamic Vinaigrette (see below)
4 Arugula Leaves
Guacamole
3 Avocados, halved, seeded and peeled
1 Lime
1 tsp Lemon Juice
¼ cup Red Onion, diced
2 Roma Tomatoes, diced
2 Garlic Cloves, finely minced
2 tbsp Cilantro, chopped
1 tsp Salt
½ tsp Cumin
¼ tsp Cayenne
Balsamic Vinaigrette
¼ cup Balsamic Vinegar
½ cup Extra Virgin Olive Oil
1 tsp Salt
½ tsp Pepper
1 tsp Dijon Mustard
1 Garlic Clove, pressed or finely minced
1 tsp Honey

DIRECTIONS

Guacamole

Put the avocado slices into a large bowl and squeeze whole lime over top of them, add lemon juice, and toss to coat. Let sit for a couple minutes to allow the lime juice to absorb.

Add garlic, salt, cumin and cayenne. Then using a potato masher, mash the avocado mixture to the consistency you desire (smoother or chunkier)

Then fold in the onion, tomato and cilantro. Let sit at room temperature for at least 10 minutes, longer if you can 20-30 min). Taste. Add more salt or lime depending on your taste and/or avocado ripeness.

Balsamic Vinaigrette

Combine all ingredients into a salad dressing shaker and shake well.

Toast your bread to your liking. Drizzle about 1/2 tsp of Balsamic Vinaigrette on the toast. Spoon guacamole onto the toast and drizzle more vinaigrette on top (to your liking). Top with arugula or your choice of lettuce.
