Tomato Basil Bagel

This isn’t so much a recipe as a delicious suggestion to start your day with something savory versus sweet. Many people choose to top their bagel with jelly or jam—and there’s nothing wrong with that. But for those days when you wake up and prefer a more savory option, my tomato basil bagel hits the spot. It’s so simple yet so delicious.

Most people may not think to pair cream cheese with tomatoes, but they really work well together. Think bruschetta bread but with added creamy cheese. I’ve actually topped my bagel with a bruschetta tomato mix and it’s crazy good. If you think of your bagel as just bread, your options are limitless really.

As far as the type/flavor of bagel to use for this pairing, a savory bagel works best—like an everything, garlic or onion. If you’re lucky to find one, a sun-dried tomato bagel is amazing! I was able to find them in California more readily than in New Jersey.

INGREDIENTS

1 Bagel (everything bagel works nicely)
1 tsp Olive Oil
3 tbsp Cream Cheese
6 Tomato slices
1 dash Salt and Pepper
1 tbsp Basil, fresh, chopped

DIRECTIONS

Toast your bagel to your liking. While toasting, slice the tomato and chop the basil.

Once the bagel is done toasting, use a butter knife to pierce the top of the bagel to allow areas for the olive oil to soak in. Gently pour the olive oil on the bagel slices (this replaces buttering the bagel—it's my opinion that all bread products need a fat first before putting anything else on).

Spread the cream cheese. Top with sliced tomatoes and sprinkle with salt, pepper and chopped basil. Enjoy!
