Steel-Cut Oatmeal with Apples and Cinnamon

This is my family’s go-to recipe for steel-cut oatmeal. It tastes like apple pie in a bowl, but a bit less sweet, and it’s a hearty way to start your day. The richness of the toasted oats paired with apples, cinnamon, and brown sugar just melts in your mouth. For added nutrition, I mix in chia seeds and flaxseed meal. For added pop, I add some lemon juice which wakes up all the flavors. But the real trick is toasting the oats in the butter, apples, cinnamon, and nutmeg. This really deepens and enhances the flavor of the oats. Oh, and this is a one-pot meal—enjoy!

Steel Cut Oatmeal with Apples and Cinnamon

INGREDIENTS

Apple Sauté
2 tbsp Butter
1 Apple, diced 1/2" cubes
1 tsp Light Brown Sugar
¼ tsp Cinnamon
1 dash Nutmeg
1 cup Steel Cut Oats, organic
4 cups Water
¼ tsp Salt
Oatmeal Flavoring
3 tbsp Light Brown Sugar
1 tbsp Chia Seeds
1 tsp Flaxseed Meal
½ tsp Vanilla Extract
½ tsp Lemon Juice
¼ tsp Cinnamon
¼ tsp Salt

DIRECTIONS

In a large stockpot over medium-high heat, melt 2 Tbsp butter. Add the apples, light brown sugar, cinnamon, and a dash of nutmeg; sauté for 5 min. Add 1 cup of steel cut oatmeal, mix well and cook until fragrant, about 2 min.

Add 4 cups of water and salt and bring to a boil; reduce to medium-low and simmer uncovered for 25-30 min, until thick and bubbly. Remove from the heat and mix in the oatmeal flavoring ingredients. Let sit for 5 min. and serve. Taste for salt, and if you prefer a sweeter taste add more brown sugar.
