Cabbage and Apple Salad with Ginger Vinaigrette

This cabbage and apple salad is my go-to salad because it’s easy to make and can last for a few days in the fridge. I can make it on Monday and eat it throughout the week. It perfectly pairs with sandwiches, chicken dishes, or on its own. I use both green and red cabbage to keep it pretty but this recipe works the same with just one cabbage type.

For me, when it comes to a salad, it’s all about the dressing. It serves as a unifier between all the ingredients. For this apple and cabbage salad, the ginger vinaigrette is slightly sweetened by honey yet the fresh ginger and chili garlic sauce adds a little spice. It has a nice balance of sweet and spicy but doesn’t overpower the salad ingredients. Enjoy!

INGREDIENTS

Salad
2 cups Green Cabbage, thinly sliced
3 cups Red Cabbage, thinly sliced
½ cup Carrots, shredded
1 Apple, Gala or Fuji
½ cup Green Onion, chopped
¼ cup Almonds, sliced
Dressing
2 ½ tbsp Soy Sauce
¼ cup Apple Cider Vinegar
1 tbsp Honey
1 tbsp Ginger, freshly grated or puree
1 tsp Dijon Mustard
¼ tsp Chili Garlic Sauce
1 Garlic Clove, minced
½ tsp Salt
¼ tsp Black Pepper
½ cup Extra Virgin Olive Oil

DIRECTIONS

Prepare the ginger vinaigrette. Put all the ingredients into a deep bowl and whisk together until incorporated. Slowly drizzle the oil while whisking. You could also put all the ingredients into a shaker and shake-shake-shake!

Prepare the salad by putting all the ingredients into a large bowl and pour the dressing on top. Mix well. Refrigerate and let rest for at least 30 min before serving. Let it come up to room temp before serving.
